a platter of lamb biryani, Lucknow style

biryani

Biryani is a dish of many components, of which rice is just one.

A typical biryani is made from layers of ingredients, finished in a single pot. They can be complex to prepare but the results are usually majestic if done correctly. Biryani is never a side dish. It is either a course on its own at a feast or a meal itself with simple accompaniments.

You can never claim to have eaten Indian food until you have eaten a proper biryani, and there are several proper biryani recipes in this section.
