A very simple and basic recipe for cooking dal. This recipe for uppu paruppu or dhandar makes a great side dish or a simple meal. Another comfort food recipe.
Thoroughly wash the pigeon peas, place in a small bowl, cover with 3 cups of warm water, then set aside to soak for one hour.
Drain the pigeon peas, then place into a deep pot with the red lentils, turmeric, asafoetida, salt and five cups of water Mix well.
Gently bring the pot to a boil, then reduce heat to low and skim off any foam. Simmer for 10 minutes, stirring frequently. The water should be about the same level as the dal. Seal the pot, turn heat off and allow to stand for 10 minutes so the lentils absorb all the water. Stir occasionally.

If the lentils are drying out, add water, a tablespoon at a time, stirring well.
