Place all the ingredients in a pan and gently bring to the boil, stirring often.
Remove from heat, cover pan and set aside for 15 minutes.
Using a fine sieve, strain the tea into another pan of at least the same size.
Pour the strained tea into the first pan from as high as you can reach. The resulting tea should start to look frothy. Repeat this step several times. You need to do this three or four times to get the aeration necessary.
Return pan to the heat and bring back to almost boiling, without stirring. Stirring will break up the aerated mixture.

Pour into serving jug, or directly into cups or glasses and serve.

To break the nutmeg, wrap it in cling film or baking paper and hit it with a rolling pin.
Try adding a Kashmiri chilli to the spice mix for an extra bite
Try using condensed milk. Use 400ml of condensed milk and 600ml of water.
Try almond milk, substituting it for the normal milk.
